Christmas collard wraps


After a long semester that continually sucked the life out life, I started exercising again. I am getting back to what I can’t believe I could ever go without. I sure eat healthy, but when I get out of the exercise habit…I feel ewww. Chubby, stiff, old, just ewww. When I exercise I feel limber, thin, strong, and just plain good! And the hurt-so-good sore muscles are…awesome. How do you get exercise?

Christmas Collard Wraps
collard greens
raw cheddar cheese* (cubed)
coconut butter (optional)
green apple (sliced finely)
celery (chopped or cut longways)
walnuts (soaked and dehydrated)
cranberries
honey

First make the dried cranberries. Slice in half, cover with honey, and dehydrate until chewy. Roll (with a rolling pin) a collard green and cut away the hard spine. Rolling the collard green helps break down the normally thick and tough leafy green. The collard green will soften, which allows for easier wrap rolling and chewing. Fill the collard green with the above ingredients and enjoy!

*Use almond cheese if you’re vegan :)

    I’ve never been much of an exerciser, and after having 2 children I’ve paid the price for not having that discipline.

    I now walk my new dog once or twice a day at a quick pace. I feel surprisingly better having started that 2 moths ago. I’ve recently added in a TTapp video, and though I am still 70lbs overweight, I have lost almost 20 pounds and feel stronger and (dare I say?) thinner.

    Adding more fresh, raw foods to my diet is no doubt a huge help. I appreciate the recipes you share!

  3. Lauren, it sure makes eating greens more tasty! I also enjoy running. I was on the track and field team in high school, so running is one of my favorites. Lately, I’ve been doing stair climbs to prepare for a (sort of) race next month. I basically run up and down our stairs :)

  4. Hannah, Can I share this post and also the walnut ice cream in the next several weeks? If so, could you provide me with a short bio? Also, when you dehydrate cranberries, covering them in honey, doesn’t it get pretty messy and run all over in the warmth of the dehydrator. Is there something I can use like parchment paper to put underneath? My shelves are stainless mesh…yucky mess! how long will it take if they are cut in half and at what temp? Thanks, dear one!

  5. This was amazing, I also made your orange truffles tonight… euphoria. I used goat cheese in mine bc I didn’t have cheddar, really liked the soft texture of the goat cheese.
