After 6.5 years I officially have a Bachelor’s Degree in graphic design from Indiana Wesleyan University! I don’t think I’ll believe it’s true until next month when I don’t have to go back to class :) Last Saturday friends and family celebrated the end of this journey in my life and the beginning of the next. God has sustained me through this long and interesting journey, and kept me in school while my heart was often not. Thank you to all who encouraged me to keep at it, especially towards the end.

During the years I went to school part-time, I was able to start a business and the Lord has been faithful through my diligence. I’m very blessed to have had work the literal day I graduated…and in the field I studied. Hope you all have a Merry Christmas!

Mint Chocolate Fudge Pies

It’s that time of year! Christmas baking and treats galore. Last year I made several raw goodies to get through the season healthy and satisfied. Hopefully this year’s addition will encourage healthy eating on into next year. This pie is basically fudge in a crust. So good and ooey gooey!

Mint Chocolate Fudge Pies
2 c oat groats
1/2 c coconut sugar
1/2 c water
2 t olive oil
1/2 t Celtic Sea salt

1 c cashew butter
1 c honey
1/2 c cacao powder
2 t mint extract

Grind oat groats into flour. Process all crust ingredients and spread into pan (or pans). Dehydrate for a few hours or just until the crust is no longer sticky. For the filling, process all ingredients until oil just begins to separate (this is when it becomes fudge-like). Fill crusts and refrigerate. Enjoy!
